How To Make The Burrito

Start by placing frozen diced potatoes with onion and pepper in a microwave-safe bowl, tossing them with a little oil, salt, and pepper. Cover the bowl with plastic wrap, poke a small hole for ventilation, and microwave until the potatoes are tender, stirring halfway through. Meanwhile, whisk eggs with a splash of milk, salt, and pepper in another microwave-safe bowl. Microwave in short intervals, stirring in between, until the eggs are fully cooked and fluffy.


To assemble, lay out tortillas and layer the eggs, cooked potatoes, shredded cheese, and salsa down the center. For extra flavor, add sliced avocado, hot sauce, or any preferred toppings. Wrap the burrito by folding up the bottom, then folding in the sides, and rolling it tightly to seal.
